Nutrition Service Center
Introduction

The Jefferson County Public School District has approximately 98,000 students in more than 149 sites. Providing safe and nutritious meals to the students of the District is a priority to enhance the educational process.

The Jefferson County Public School District's School and Community Nutrition Services Department serves an estimated 15 million breakfasts, lunches, and snacks to students and staff each year. School & Community Nutrition Services staff administer the National School Lunch and Breakfast Programs, the Child and Adult Care Feeding Program, the Child Care Enrichment Program, the Adult Care Food Program, and the Summer Food Service Program for the District.

In January 2000, the District opened a 68,000-sq. ft. Nutrition Service Center to provide warehousing and food-production support to all of the schools in the District. The Nutrition Service Center assures consistent quality of the school meals, while enabling schools to offer a wider variety of menu items and to better address pressing staffing issues.

Our bakery department prepares the cookies, dinner rolls, cakes, and muffins that are consumed by our students. In cook chill they prepare, soups, sauces and entrées such as, chili, spaghetti, tacos and beef-a-roni. The packaging and assembly area is the area where sandwiches and salads are assembled and packaged to be sent to our students. Our warehouse stocks over 250 items that are shipped to schools. We have a state of the art facility and invite you to call and set up an appointment for you, and your department, to come and let us show you our facility.

Storage and Production Areas

Warehouse [ Photo Gallery ]
The 29,000 sq.ft. warehouse stores approximately 2,500 pallet loads of various dry, frozen, and refrigerated food products, as well as paper and other disposable products.

Ingredient Control
One of three temperature-controlled areas in the center, all ingredients are weighed and measured here before being prepared in cook chill.

Cold-Food Preparation
Up to 3,000 pounds per hour of salads and other cold-food items can be prepared in this temperature controlled area.

Cook/Chill [ Photo Gallery ]
Staff in this area can prepare and chill 200 gallons per hour of a variety of items including, taco meat filling, spaghetti meat sauce, chili, chicken potpie, poultry, gravy, cheese sauce, ranch dressing and more. A 2000-lb. Cook tank allows preparation of 120 turkey roasts at once. The cooked and chilled product is sliced, vacuum packaged and distributed to school sites for the menu.

Bakery [ Photo Gallery ]
The 9,000 sq.ft. “gem” of the Nutrition Service Center, the bakery is equipped with a variety of mixing and depositing equipment that enables staff to prepare and bake 15,000 yeast rolls; 6,000 cookies; and 10,000 servings of brownies and cakes per hour.

Packaging/Assembly [ Photo Gallery ]
Individual sandwiches and salads are prepared and wrapped in this area, as well as bulk sliced meat. Each summer upwards of 7,000 individual meals including a sandwich , fruit, fruit juice, dessert and milk, are prepared daily and assembled to be distributed to sites around Metro Louisville participating in the Summer Food Propram.

Cart Loading/Food Bank [ Photo Gallery ]
This area holds more than 400 shipping carts and 50 pallets of prepared Cook/Chill products.

Catering Kitchen [ Photo Gallery ]
The Catering Kitchen is a full-service kitchen, with staff providing catering support for the District.
